A Different Version of Broccoli Soup

I got this recipe from my sweet mother. This is one of those recipes that do not have to have the exact measurements. It is one of those that you throw all the ingredients in pot, and the outcome is scrumptious!


Ingredients:
(2) Bags of Frozen Chopped Broccoli
(2) Packages Country Sausage White Gravy or Country White Gravy
1/2 Block of Velveeta, cubed
1 Can Cream of Mushroom Soup (I used the 98% Fat Free)
1/2 Stick of Butter (I used Blue Bonnet Light)
1/4 - 1/2 Cup of Chopped Onion
Salt and Pepper
1/2-1 cup of Chicken Broth (optional - the soup is a little thick)

Directions:

In a separate pot, fix the gravy, following the directions on the package.

Steam the broccoli in the microwave or on the stove until semi-tender.

 In a soup pot, saute a 1/2 butter and 1/4 -1/2 cup of chopped onion until clear (about 5 minutes). Add 1 can of cream of mushroom soup along with cubed Velveeta. When gravy is finished, add to the soup mixture along with the semi-tender broccoli. Season to taste, and let simmer about 30-45 minutes. Add salt and pepper and if you would like to have a thinner soup, add some chicken broth.


Serve with Ritz Crackers!
